- Beef or lamb both work: Ground beef is the version I make most often, but ground lamb gives you a more traditional shepherd’s pie. Both cook in exactly the same way.
- Chuck roast is a great alternative: If you’d rather use beef chuck, reduce the broth by 1 cup, sear the meat first, then cook on LOW for about 6 hours before shredding it with two forks.
- Homemade or instant mash: Homemade mashed potatoes give the best texture, but instant mashed potatoes work well if you’re short on time. Just make them a little thicker than the packet instructions suggest.
- Cook on LOW for the best gravy: I don’t recommend using the HIGH setting if you can avoid it. The slower cooking time gives the filling a richer flavor and helps stop the gravy from reducing too much.
- Want a golden topping? Slow cookers don’t brown food, so if you’d like a little color on the potatoes, place an oven-safe crock under the broiler for a few minutes, or use a culinary torch before serving.

Store any leftover shepherd’s pie in an airtight container in the refrigerator for up to 4 days.
Reheat individual portions in the microwave until piping hot, or warm larger portions in a 325°F (160°C) oven, covered with foil, until heated through. If the mashed potatoes seem a little dry after chilling, add a small knob of butter before reheating.
Shepherd’s pie also freezes well. Cool completely, portion into freezer-safe containers, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

I usually serve this exactly as it is. It’s already got the meat, vegetables, and potatoes, so there’s not much else to think about.

For the Mashed Potato Topping
- 2½ lb (1.1 kg) potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup milk
- ½ cup shredded cheddar cheese, optional
- Salt and black pepper, to taste
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain excess fat.
- Add the beef, onion, carrots, celery, and garlic to the crockpot.
- Sprinkle the flour over the mixture, then add the tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well.
- Cover and cook on LOW for 5½–6 hours, or until the vegetables are tender and the filling is rich and flavorful.
- Prepare the potatoes separately. Boil them in salted water until fork-tender, about 15–20 minutes. Drain well.
- Mash the potatoes with butter and milk. Season with salt and pepper. Stir in the cheddar cheese if desired.
- About 30–45 minutes before serving, spread the mashed potatoes evenly over the beef filling in the crockpot.
- Cover and continue cooking until the potatoes are heated through. For a golden top, transfer the crockpot insert to an oven-safe setting and broil briefly, if your slow cooker allows it.
